It is with pleasure to announce that my wife Paris has joined as majority Partner and owner of Paris Restaurant. The restaurant is indeed named after her. I will still be there in the background, for investing needs, advising, and finance management. Our chef Jason and his team are here to stay, preparing and serving the same great food as they always did since the beginning on November 5. Although we approach food they way the French do, with locally sourced, fresh ingredients direct from the farm, we serve a fusion Pacific Northwest dishes with European quality.
We have slightly changed our hours of operation: check out our website here, for the most recent update. We will stay open later for dinner (till close), opening at 3 pm including Wednesday now, and closed for lunch except Friday, Saturday and Sunday (our brunch is very successful). We are still closed on Tuesdays as usual.
I invite you to check our menu (see general info below) as it changes based on fresh ingredients available. However, we do our best to keep the most popular dishes available at all times. The picture below features our Chateaubriand. It was taken by our new photographer.
Question of the week
How do you recognize fresh clams? I asked our chef Jason how he managed to serve mussels with no empty shells, something I never experienced in any other restaurants. He told me that there is no secret: they are freshly collected and served on the same day.
Paris is also the only restaurant in Skagit, Whatcom and Snohomish counties offering octopus, rabbit, steak tartare (when available), foie gras and several other unique dishes, prepared to perfection. We will soon offer tapas.
